It’s Candlemas (AKA pancake day) again on Sunday 2 February. As in previous years, children and adults will succumb with delight to the delicious tradition of tossing pancakes. Served with jam or honey, this delicious dessert is placed under the spotlight. A chance to get the family together on a Sunday afternoon for a mouthwatering treat.
But before you eat them you have to make them. So on with your aprons, Destination Paris Saclay suggests this easy recipe for excellent, tasty crepes made from brown flour that you can buy from the Fournil de la Ferme Vandame in Villiers-Le-Bâcle! 375g flour (white or brown)
1 litre lukewarm milk
1 sachet vanilla sugar
1 pinch ground cinnamon
75g caster sugar
3 pinches salt
90g melted butter
Melt the butter in the microwave and heat the milk slightly to lukewarm (this will prevent lumps from forming).
In a large bowl, mix the sifted flour with the sugar, cinnamon and salt.
Add the eggs and melted butter, then gradually stir in the milk, using a whisk to beat the mixture into a smooth, lump-free batter.
Add the sachet of vanilla sugar, stir and leave to stand for 30 minutes before cooking.
Fat should be added to the frying pan for each pancake.
Cook the crepes on each side until golden brown.
Stack the cooked crepes on a plate and cover with tin foil to keep them warm.
All you have to do now is taste. What are you waiting for?
